For boiling water for tea, a traditional Japanese iron kettle (tetsubin) is a wonderful choice. When used with tap water, it can produce water with a noticeably softer, mellower taste, allowing the flavours of tea to shine. Even when comparing water boiled in a regular kettle with water boiled in a tetsubin, the difference in taste can be surprisingly distinct.
Made in Mizusawa, Iwate Prefecture, a historic centre of Japanese iron casting, this kettle carries on a centuries-old tradition of craftsmanship. The region’s casting techniques, which once helped support the culture of Hiraizumi, continue to produce enduring, everyday objects with care and skill.
An iron kettle can seem intimidating at first, particularly when it comes to rust and maintenance. In practice, however, caring for one is relatively simple. The two most important things to remember are to keep the interior dry after use and never scrub the inside.
Care Instructions
- Keep the kettle dry after use. Once the water has been transferred to a thermos or another container, open the lid while the kettle is still warm and allow the residual heat to evaporate any remaining moisture. If necessary, briefly heat the kettle over a low flame to dry the interior completely.
- Never scrub or wash the interior. A natural mineral deposit called yuaka gradually forms as minerals in the water accumulate inside the kettle. This pale layer helps protect the iron and reduce excessive rusting. Preserve it by avoiding scrubbing, detergents, or abrasive cleaning.
- Use it regularly at first. During the first month, boiling water daily can help the mineral layer develop more quickly. Some rust may appear naturally over time and is not necessarily a cause for concern.
- Fill to approximately 70% capacity. Leave enough room to prevent boiling water from spilling out through the spout.
- Avoid sudden temperature changes. If the kettle is accidentally heated until completely dry, do not cool it with water. Allow it to cool naturally to prevent damage.
Water boiled in a cast iron kettle develops a mellow character, and small amounts of iron may be released into the water, contributing to dietary iron intake.

A simple daily ritual—boiling water in the morning for a cup of tea, coffee, or warm water—can become a quiet pleasure.
