Food cooked in a donabe (Japanese clay pot) has a distinctive, comforting flavour. Made from the naturally coarse clay of Iga (Mie prefecture), this pot heats gradually and retains warmth exceptionally well, allowing ingredients to cook gently and evenly. Vegetables become tender, meat turns meltingly soft, and the natural flavours of each ingredient are beautifully brought out.
The secret lies in Iga’s unique clay. Once beneath the waters of Lake Biwa, the region is known for clay rich in organic matter. During firing, these materials burn away, leaving countless tiny air pockets in the clay. This porous structure slows the transfer of heat, allowing the pot to warm gradually and retain heat long after being removed from the stove.
With its substantial form, rounded rim, textured clay surface, and expressive glaze, this donabe is as beautiful as it is practical. Its shallow, wide shape allows ingredients to be arranged beautifully and remain visible above the broth. Ideal for simmering, steaming, roasting, and cooking rice, it brings out the best in even the simplest ingredients. Deep-frying is not recommended.
Each pot is carefully shaped by skilled craftspeople using traditional techniques. As the shallow form is made without a mould, natural variations in size and shape are part of each piece’s individual character.
Kiso Sawara Wooden Lid
Made from solid Kiso sawara cypress, this simple, lightweight wooden lid has a smooth texture and a subtle natural fragrance. Its arched handle is easy to lift and comfortable to hold. With use, the wood gradually develops a beautiful amber patina.
The untreated wood can absorb colours and odours, so lightly wetting it with water before use can help minimize absorption.
Care Instructions
Before using your donabe for the first time, it is essential to perform medome (a seasoning process) to help reduce the clay’s absorbency and minimize the risk of cracking and staining. Please follow the recommended care instructions before first use. (See the care instruction below).
Always allow the pot to cool completely before washing, and never expose it to sudden temperature changes. Ensure the bottom is completely dry before placing it over heat, as heating a wet pot may cause damage.

Iga ware 伊賀焼, iga-yaki
Iga ware (伊賀焼, Iga-yaki) is a traditional style of Japanese pottery made in Iga City, Mie Prefecture, using locally sourced clay and time-honoured techniques. With a history dating back to the Nara period (710–794), Iga ware is known for its distinctive, rustic beauty, shaped in part by the unique properties of the local clay.
Due to the handcrafted production, there are individual differences in shade, gloss, and size of glaze. Its beauty is one of a kind.
As earthenware is more porous than porcelain, it can absorb moisture, food stains, and odours. Before using your Iga ware for the first time, please follow the care instructions to help prepare the pottery and protect it from staining and unwanted odours.
